And speaking of my sister and our trip to Texas, I have so many photos and stories to post, but coming back home always brings about that “Where do I even start?” feeling! There are suitcases to unpack, laundry to wash, notes to write, food to buy, schoolwork to get done, meals to prepare, calls to return, etc! I have been slowly uploading photos, and hope to share some highlights of our trip south soon!
For now, I will leave you with my own version of the smoothie I kept ordering at Whole Foods. It almost tastes like cheesecake – and yet is really good for you and your gut!
1 medium banana
1 cup frozen peaches (Or fresh)
3/4 cup kefir (I have been using goat milk kefir)
2 tsp grated ginger root
1/2 – 1 tsp cinnamon
2 Tbsp almond butter
Place all ingredients in blender and blend until smooth.
Enjoy – and try to stay warm in spite of this cold drink!
Wow, that looks good! It's a little too cold here in Colorado for that now, but it will be great to try come spring.

Hey Mel, I've loved reading your blog so much over the few years I've been at MERCYhouse, and I've been inspired to start my own little blog. Every week, Connor and I are going to pick a recipe, buy ingredients, and then cook something together, and I'm going to blog about the cooking & the communicating involved for a young couple!
