Gluten Free Friday ~ “Bran” Muffins

I’ve been meaning to post this recipe for a while now but just haven’t, and so a Facebook message from my sweet friend Lois this week was just the nudge I needed.  She said she was craving them and wanted to try making them herself.  (She eats gluten free, too!)  I have made them for our mid-week potluck and Bible study at church twice now, and even the non-Celiacs seem to gobble them up.
The recipe is from one I found on the back of a flax meal package.  I substituted ground oats for oat bran and GF flour for regular wheat flour.  They are a great substitute for a morning glory or bran type muffin.

Gluten Free “Bran” Muffins

1 1/2 cups GF flour mix
3/4 cup flax meal
3/4 cup GF oats, ground in blender or food processor to flour/powdery texture
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 1/2 cup carrots, shredded
2 apples, peeled and shredded
1/2 cup raisins (optional)
1 cup nuts (optional)
3/4 cup milk
2 eggs
1 tsp vanilla

Mix all dry ingredients together.  Stir in apples and carrots ~ raisins and nuts, too, if desired.  Combine milk, eggs, and vanilla.  Add liquid ingredients to dry ones and combine until just moistened.  Spoon into muffin tin and bake at 350 degrees for 15-20 minutes.  Makes about 15.
