Gluten Free Friday (really Saturday)

This one is from my sister Melissa, and is a great dip for tortilla chips or topping for grilled chicken. To me it is a spring/summer dish – great for potlucks, outdoor cookouts, etc. The temp reached almost 60 here today, and I know it’s warm where most of you are, so enjoy! (Don’t know if we’ll be having it anytime soon, as last time I checked avocados were 2 for $5! Anyone want to send me a care package from warmer climates?)

Avocado Salsa

4 avocados, cut in chunks
2-3 diced tomatoes
1 bunch green onions
2 4oz cans chopped green chilies
1 4oz can chopped olives

2 Tbsp cider vinegar
4 Tbsp olive oil
salt
pepper
garlic powder

Place first five ingredients in mixing bowl. Whisk together next five ingredients, and pour over avocado mixture. Toss together and serve.
